Filotea follows recipes from its home region of Marche to create its pasta. While we can’t say what each step was to whip up this batch of
Orecchiette, we can tell you is that it includes carefully sourced flours, durum wheat semolina and fresh eggs. Inspired by the fresh dishes that would have been served for traditional Italian Sunday lunches, the little shells of pasta are slowly dried at low temperatures, creating a texture that’s primed for soaking up sauces and flavour.
